Description
Ember – Honduras | Medium Roast
Flavor Notes: Caramel • Citrus • Floral
Ember comes from the celebrated highland region of Santa Bárbara, Honduras, where diverse elevations and rich volcanic soil shape coffees with remarkable sweetness and clarity. The environment here produces a profile that feels warm and grounded, yet naturally bright — a balance that makes Honduran coffees so consistently rewarding.
This lot from San Vicente is fully washed, a process that highlights the coffee’s clean structure and layered sweetness. Careful depulping, rinsing, and slow drying allow the natural character of the varieties — Catimor, Bourbon, Lempira, and Pacas — to shine without distraction.
In the cup, Ember opens with smooth caramel sweetness, lifted by lively citrus notes and finished with soft floral undertones that add a gentle elegance as it cools. It’s approachable, steady, and quietly complex — a comforting daily cup with just the right amount of lift.
